Jul 14, 2021 · The dressing was made by frying bacon, then draining the bacon and crumbling it into bits. Into the skillet with hot bacon grease she added onions and apple cider vinegar and tossed the potatoes with the hot dressing. Instead of diced celery she seasoned the salad with celery seeds and lots of cracked black pepper.

Jan 14, 2017 · Posted May 9, 2021. As it turned out, I made the chicken salad with about 3/4 small dice and 1/4 shredded, I like this hybrid’s texture for either plating or putting on bread. Apr 28, 2012 · Just a note on celery, which has long been an ingredient in mirepoix. It may be that the celery commonly available in the US now is not what was used 100 yrs. ago. Look up Kalamazoo celery, and note that the celery grown there was paler, and blanched during cultivation, producing a much less bitter celery than the now common Pascal.
